Gualtiero Marchesi presents Trucioli pasta with Saffron – Italian cuisine for Expo 2015
Gualtiero Marchesi, one of the most famous Chef in the world, founder of “nuova cucina italiana” ( modern Italian Cuisine), has recently presented in Villa D’Este his new dish that it has been created for Expo 2015 : Trucioli pasta with saffron.
It is a culinary work inspired to local furniture artisans; in fact this beautiful dish reminds us the wood shavings that cover woodworkers tables ( trucioli is the Italian word for wood shavings).
A scenic dish for our eyes and definitely delicious for our tastes… here you are the cherished original recipe:
Ingredients for 4 people
gr 320 of trucioli pasta
gr 80 of butter
gr 3 of saffron stigmas
lemon drops
gr 5 of salt
gr 20 of black crunchy rice
Preparation
Melt the butter in a pot, cooking over low heat, to avoid that it doesn’t sizzle.
Combine the saffron stigmas and add some lemon drops and salt; emulsify with a little water. Keep the sauce warm.
Cook your trucioli pasta with abundant salted water. Strain the pasta and add the saffron sauce.
Serve the pasta on a black plate and sprinkle the crunhy rice on.
